Coborn’s Market & Table Welcomes Two Chef-Led Restaurants

After the City of Plymouth expressed desire for an anchor tenant in the former Prudential Financial campus, Coborn’s surveyed the Plymouth community to discover its needs. According to former senior vice president of marketing and communications Dennis Host, Coborn’s found that the city wasn’t just looking for another grocery store.

“The impetus behind all of the features that we built into the store was around local, around fresh, around delicious food and community gathering,” Host says. “And so that’s what you see in the store. You run into your neighbors there; you run into your friends there.”

The standouts of the flagship Market & Table include The Global Table by chef David Fhima and The Buttered Tin by chef Alicia Hinze.

Fhima, the mind behind Maison Margaux in Minneapolis, is a longtime friend of Emily Coborn Wright and the rest of the Coborn family. Coborn Wright called Fhima with their new idea for an in-store restaurant, which evolved into the three elevated fast-casual restaurants that The Global Table encompasses today. Fhima and the Coborn family settled on Abuela’s Mexican Kitchen, Basta Pasta and Brothers Burgers to offer variety for guests. As the menus developed, Fhima decided Plymouth was the right venue to push limits. “They’re ready for that,” Fhima says. “I think that’s what gets them excited, that they get to have a dish as authentic as a birria taco from Morelos, Mexico, in Plymouth, Minnesota, that’s made by a wonderful Mexican grandma; a pasta made in store by an ordinary, pissed off Sicilian chef.”

The menus offer classical options alongside elevated choices—sit down for Rigatoni Bolognese (grandma’s recipe), try a side of Wagyu Beef Chili or sample breads using Fhima’s 130-year-old sourdough starter.
The love of quality food and connection, says director of culinary and food service Catherine Potter, is what really sets The Global Table’s atmosphere apart. “You can see the pasta being made right to your right,” Potter says. “The tortilla is made right behind you on the line. Everything’s plated on dishes, so you can feel like you’re right at home.” She says it’s one of her favorite aspects. “You don’t feel like you’re just out at a fast-food restaurant. No sacrifices there,” she says.

Fhima’s reasoning for his grocery store venture is simple. “Food, to me and my family, is none of us own the recipes,” he says. “None of us own the story. It’s meant to be shared; it’s meant to be taught … That’s how you create communities, and this is just the beginning of it.”

Across the aisle from The Global Table, Hinze and The Buttered Tin are cooking up brunch favorites and a beautiful array of baked goods. Plymouth marks the brunch hotspot’s third location. “The core menu remains consistent with our St. Paul and Northeast locations, which is intentional,” Hinze says. “Guests visit us for those favorites.” This spot, however, offers longer hours, so shoppers can pop in for an early morning pastry or an evening cupcake.

Hinze made the leap into the grocery industry to meet people where they are naturally. “It aligns with how people live today—blending convenience with quality,” she says. “Guests can shop, dine and pick up bakery items or catering all in one stop.”

Coborn’s Market & Table shares The Buttered Tin’s goal of delivering from-scratch and local products to guests, many of whom might stumble upon the restaurant for the first time while grocery shopping and come back for more. “Supporting local is a core part of who we are, and we purchase from and partner with Minnesota-based, organic producers whenever possible,” Hinze says. “Sourcing ingredients from local farmers and producers and working with regional suppliers is important because it strengthens our community, supports other small businesses and ensures quality and freshness.”

The menu, with favorites such as the California Turkey Club, Damn Good Egg Sandwich, Loaded Hash Browns and Soft Scramble, spans breakfast and lunch, with unique flavors at every turn. Don’t forget to try the must-have cinnamon roll or members of the rotating bakery lineup, including cakes, cookies and hand pies.

The mix of guests coming for a quick stop on a grocery run and those who might come out just for a meal excites Hinze about the outside-the-box location. “The Buttered Tin has always been a destination, and Plymouth gives us the opportunity to be both a destination and a convenient everyday stop,” Hinze says.
